Looking for a good flight sim

I'm looking for a good flight sim game with some harrowing dog fights. If you feel so inclined please suggest a game and a good joystick that you feel is top notch.

for a flight sim, i have to say X-wing Alliance(yeah its old but its very good), as for a joy stick i use a logitech Attack 3 and i think its good and has helped me crush the rebel scum on more then once
