Him walking into combat with a light saber would be suicide. We know that wielding a lightsaber does not make one a Jedi. Heck, even Han Solo wielded one in ESB. But when you are dealing with the general public (the kind that don't understand how freaking out of place the A-Wing is in this timeline, wonder what the heck a "Broadside" is, etc), you need to be more careful than that. Besides, what does his training have to do with anything. We can't train Jedi in this game. So it's just there for "good-looking" and not because it shows content of the game. (We all know this image of Luke from several games box shots.
