Best bet to start with is to tweak the ships, so all of them or worht building throughout the game. I once knew a great man. Nothing got to him, and he always smiled. To answer your question, I would have to say I enjoy tweaking the stats on ships ans such, aswell as editing the character stats to make for more of an interesting game. However, if you are talking about mods, check out SWR's mod section here. Cain's mods, Protectorate: The Empire Strike Back is a great TC or Total Conversion.
